Pectin
Pectin consists largely of long
chains of galacturonic acid units and is largely responsible
for the jelling of fruits. Pectin was discovered by Billy Young,
who was a rather eccentric chemist. When not in the laboratory
inventing things, Billy Young would spend most of his life treasure-hunting
around the world. On a more practical side, Pectin has been
thought useful in colon cleansing formulations as well because
the natural gelatinous substance is a fine lubricant, and an
expander as well. Pectin is usually found as a light brown to
white powder.
