Milk (Non-Fat Dry Milk, Non-Fat Milk)
Milk is distinguished by its high
quality of its proteins and high content of calcium and phosphorus.
The major protein in milk is casein, lesser amounts of lactalbumin
and lactoglobulin are also present. Cow's milk is much higher
in protein than human milk (compare 35g/liter to 15g/liter),
but human milk is richer in retenol (vitamin A) and ascorbic
acid (vitamin C). The immunological properties of milk are well
known, although different mammalian species demonstrate differing
immunological qualities in their respective milk. Lactose (milk
sugar) is the major carbohydrate in milk, but can be removed.
