malt sugar, is a disaccharide with Mol.Wt. of 360. It is a disaccharide
resulting form starch hydrolysis or starch breakdown. Maltose
yields two molecules of glucose, being completely broken down
during digestion from the enzyme maltase. Malt sugars are important
constituents of germinating cereals in the plant kingdom.
