Carotenoids
Carotenoids are found in fruits
and vegetables. Like Flavonoids, carotenoids provide most of
the colors in fruits and vegetables, and are powerful antioxidant
compounds. There are two families of carotenoids: carotenes
which contain only carbon and hydrogen compounds, and the xanthophylls,
which beside containing carbon and hydrogen, also contain oxygen
atoms. Common carotenes include the alpha- and beta-carotenes
so abundantly found in carrots, and lycopene, which makes up
the red coloring of tomatoes. Carotenoids are very different
chemically from flavonoids, having some 40 carbon atoms with
conjugated double bonds, carbon rings and 10 single side chains.
There are over 600 different carotenoids which have been defined
to date. Recent research has indicated that carotenoids may
be able to reduce the risk of cancer, and there is appreciable
evidence that they may protect against heart disease.
