Beta Carotene (Vitamin A-Beta Carotene, Beta Carotene)
With a Mol. Wt. 537, carotene
or provitamin A, or a precursor to vitamin A, is a group of
yellow, orange or red plant pigments occurring in many fruits
and vegetables, as well as animal fat, that yield vitamin A
upon oxidative scission. The digestive track converts carotene
to retinol (vitamin A) in animals. Found in many foods, carotene
has generally one sixth the activity of retinol.
The average adult should consume 5000 I.U. of vitamin A,, and
approximately two thirds of the vitamin A activity is provided
by carotene. The most common and active form of carotene is
beta-carotene. Other forms exist, but they are not so active,
however they are being found to be important, such as lycopene.
Lycopene, a carotenoid and antioxidant, is thought to be involved
in protecting the skin from UV radiation in human studies at
Tufts University with the USDA; much more of lycopene is destroyed,
and destroyed more quickly than beta-carotene. Rich sources
of lycopene include foods like tomatoes and watermelon -- lycopene
is a red pigment.
Rich sources of beta-carotene (an orange pigment) include most
green vegetables, carrots, yellow squash, apricots and sweet
potatoes. Beta-carotene is thought to be an important part of
any program focusing on cardiovascular disease prevention. It
has been loosely linked with cholesterol management but the
data to this point has been conflicting with many studies having
been flawed and not well controlled.
